The salt
of life

Cádiz is a synonym of salt and sea. It’s always been a Spanish province with the highest production of sea salt. And nowadays it’s innovating in terms of trends, tastes and flavours in the world of salt and special salts. In the marshes or albinas (salt lakes) of Cádiz, the salt is obtained by the rapid water evaporation thanks to the constant action of the easterly or westerly winds. The Atlantic flor de sal (fleur de sel) produced in Cádiz is of high quality and growing prestige. A taste to be discovered!

Flor de Sal is considered to be the highest quality sea salt in the world. Depending on the sea or ocean where it comes from, it has significant differences in colour, flavour, texture and aroma. Flor de Sal from the Atlantic is the most highly valued by experts, as it provides the properties of an ocean that is cleaner than closed seas, and a product with a more subtle taste, as these waters are rich in trace elements such as iodine, calcium, iron and magnesium. Its composition is different from industrial salt and the fact that it is slightly humid guarantees a lower purity of sodium chloride and a greater presence of essential elements, such as ferric, calcium or natural iodine salts, which are beneficial to both health and taste.

The history of Cádiz salt is as extensive as it’s exciting. In recent decades, there’s been a movement to revalue special salts and a resurgence of the market, with demand on the rise both nationally and internationally. Flor de Sal from Cádiz has served as relaunching of the activity in some salt ponds that have survived periods of decline and in others that have reconsider the activity with new business models.

historia de la sal gaditana

Flor de Sal from Cádiz is completely artisanal. The salt ponds serve as a purifying filter, extracting only the most beneficial elements from the sea and eliminating heavy metals and other possible contaminants, leaving the hypersaline water clean, which will then produce the highest quality salt. It is obtained in a completely traditional way, harvested from late June to September by controlled evaporation of seawater in the salt ponds, which produces the first crystals of sodium chloride that are collected by experts in the moonlight.

The palette of options in the world of salt continues to develop, to the delight of the most demanding palates.
