Mojama protected by PGI Mojama de Barbate is obtained exclusively from the noble part of the tuna, known as the loin, from the Yellowfin and Bluefin tuna species, in both cases of wild origin and caught using the most traditional fishing methods. The loins are cured by seasoning and drying. The PGI seal guarantees the authenticity and quality of this unique product and regulates the artisanal production process.
