El Cabrero de Bolonia is an organic country cheese factory that uses milk of payoya goats that are herded in the El Estrecho Natural Park, in Bolonia. It’s a family business that transforms only its own goat milk into handmade cheeses, which are cured in a maturing cave made of stone over poplar wood. The flora of the cheeses is natural, and all the rinds of the cheeses are edible.
