Se trata de especies como la lechuga de mar, el ogonori y el aonori, muy habituales en la cocina oriental y cada vez m\u00e1s presentes en la cocina local. A esta oferta de aut\u00e9nticos sabores del mar se ha unido el plancton marino, producido a base de microalgas de uso alimentario. Un innovador desarrollo gaditano. \u00a1El gusto a mar est\u00e1 servido!<\/p>\n\n\n\n<p><\/p>\n\n\t<\/div>\n\n<\/div>\n\n\n<div class=\"wp-bootstrap-blocks-row row\">\n\t\n\n<div class=\"col-12 col-sm-12 col-md-4 col-lg-4 col-xl-4 offset-md-1 offset-lg-1 offset-xl-1\">\n\t\t\t\n\n<p>Las primeras algas que comenzaron a usarse gastron\u00f3micamente en la zona fueron las ortiguillas, unas an\u00e9monas marinas que viven fijadas a las rocas. Se caracterizan por un delicioso sabor a mar y una textura tierna y jugosa, debido a su alto contenido en agua. Las algas silvestres que se recolectan cuentan con una alta concentraci\u00f3n de nutrientes, aportados por las aguas enriquecidas que inundan las marismas con el movimiento de las mareas. La recogida se hace a mano, con una filosof\u00eda de sostenibilidad que permite mantener equilibrado el ecosistema. Se presentan en distintas versiones: frescas, en salaz\u00f3n, deshidratadas o combinadas con sal o especias, entre otros productos.<br><br>Fruto de un innovador proyecto desarrollado por una empresa gaditana, se ha conseguido producir microalgas de uso alimentario para su consumo humano.
